Subject: [PATCH] Remove unavailable `CIBW_ENABLE` option

`cpython-freethreading` was removed in cibuildwheel 4.0.0, since free-threaded
interpreters are considered stabilized by it.

Hence, we can build FT wheels without setting this option.
