Dynamic Provisioning - Expandable PVC

As per 1.16 we already enable ExpandCSIVolumes feature gate by default. This is required in order to be able to expand the PVC. Do we need to mentioned more steps in the README?

I wonder if its out of scope or we might be able to squeeze this out to fit the demo. Sure, if we have the time.
