chore: release v0.61.0

The notes are cut, the supported table names 0.61.x, and both versions move
together — the root's and the editor's. Splitting those two is what tagged
v0.58.0 with desktop/package.json still reading 0.57.0, and electron-builder
names the release's artifacts from that file.

What is in it: the screen overlay cut and replication protocol v4, both
breaking; a component name is claimed once, which is the third; world streaming,
LODGroup, SSAO, shader-variant readiness, the animation-to-gameplay seam, and
the rest of the thirty-eight entries the notes now carry.
