New: 5 runnable, offline demos for analysts, journalists, defense & researchers

The repo now ships five runnable demo scenarios in demos/, each aimed at a different audience and each using the real adsbwatch API over a bundled sample feed — fully offline, no network.

• 01_anomaly_scan — OSINT/aviation analysts: full scan, findings ranked critical→low
• 02_callsign_spoofing — journalists/OSINT: one ICAO, two callsigns → citable JSON
• 03_force_protection — defense: triage + sensor correlation, advisory only (human-in-the-loop)
• 04_intel_export — researchers/SOC: GeoJSON for maps, STIX 2.1 for TIPs
• 05_live_feed_offline — edge/air-gap: live OpenSky ingest served from an offline cache

Run them all with python demos/run_all.py (exits 0), or one at a time. They double as smoke tests under pytest. See docs/DEMOS.md and docs/ARCHITECTURE.md.
