Feature Request: Add column filtering (allow/deny list) for tables

Hi!
First of all, thank you so much for the tool! Special thanks for adding the skip_initial_replication parameter.

I would like to suggest a new feature: the ability to specify a list of columns to be replicated (or excluded).

Proposal:
It would be great to have something like include_columns or exclude_columns in the configuration file, for example:

databases: ['db_prod_1', 'db_prod_2']
tables: '*'
column_settings:
  - table: 'db_prod_1.table1'
    include_columns: ['id', 'name', 'email']
    exclude_columns: ['created_at', 'updated_at', 'deleted_at']
    
  - table: 'db_prod_2.table2'
    include_columns: ['id', 'order_date', 'amount']
    exclude_columns: ['internal_id', 'raw_log_data']

What do you think about this approach?
