[MUST] Backup demo plan — local MATLAB fallback

Goal

If MATLAB Online is down or slow during judging, we must be able to run the demo from a local laptop in ≤30 seconds. Document and rehearse the fallback.

Tasks

• Clone repo on a local Windows + Mac (one each) with MATLAB R2025b
• Pre-load latest_metrics.json from outputs/sample_demo/ (after [MUST] Backend E2E smoke on real fatigue_demo.mat #14)
• Verify runPeyManPixelApp opens in < 30s from cold MATLAB
• Document the local-launch path in docs/project/DEMO_FALLBACK.md:
  • exact cd and runPeyManPixelApp commands
  • which sample session to load
  • what to say during the 30s warm-up
• Plug a backup laptop (charged + ethernet ready) into the demo bag

Acceptance

• DEMO_FALLBACK.md committed
• Two laptops verified working (one Windows, one Mac if possible)
• ≤30s warm-to-UI time documented

• [MUST] MATLAB Online clean checkout test #11 (Online test) so we know what we're falling back from
• [MUST] Backend E2E smoke on real fatigue_demo.mat #14 (sample_demo bundle)

Partial done in 30f9dcf: docs/project/DEMO_FALLBACK.md added with exact local commands, synthetic fallback, and warm-up talk track. Remaining acceptance needs actual second-laptop checks and #14 sample_demo once real fatigue_demo.mat exists.
