[MUST] Demo rehearsal — 5-min timed walkthrough

Goal

Rehearse the 5-minute demo end-to-end so timing, narration, and visuals are locked before submission. Catches dead air, panel ambiguity, and over-time runs.

Tasks

• Open docs/project/DEMO_RUNBOOK.md — confirm the 5-min script is current
• Run a timed dry run with phone timer:
  • 0:00–0:30 — intro + Pey-Man concept (Pac-Man metaphor)
  • 0:30–1:30 — sensors → MATLAB Mobile recording flow
  • 1:30–2:30 — ML model: bagged trees, validation accuracy, fallback ladder
  • 2:30–3:30 — Fatigue Index + Workout Quality Score narrative
  • 3:30–4:30 — Pac-Man pixel UI walkthrough (Mertrenlab)
  • 4:30–5:00 — closing, team, license, repo link
• Record the dry run (audio fine, video optional)
• Note timing slips, ambiguous panels, missing graphics
• Update DEMO_RUNBOOK.md with corrections
• Second rehearsal must land under 5:00 exactly

Acceptance

• Two rehearsals logged here with timings
• DEMO_RUNBOOK.md updated with any narration fixes
• Final rehearsal duration ≤ 5:00

Updated docs/project/DEMO_RUNBOOK.md in commit 8363094: added exact 5-minute timing, commands, UI talking points, screenshot/recording asset paths, validation-accuracy callout, and rehearsal checklist. Remaining acceptance still requires two human timed rehearsals and MATLAB Online/data confirmations from #10/#11.
