ci: shrink GHCR matrix and speed Docker builds; flat sorfeszt pints

Root cause of the ~22m run: packages/core changes rebuild every catalog
image, and es2 added another heavy parallel job with no Buildx cache.

Remove es2/sakkmed site apps from the deploy/GHCR catalog, add Buildx
GHA layer cache + .dockerignore, and flatten Sörfeszt pint/beer fills so
black copy stays readable.
