Have you checked the books by Brant Pitre? Trully amazing stuff, even for non-christians who wish to have a better understanding. Also, have you ever heard of the Lord of Spirits podcast? It's hosted by orthodox priests, but their non-secular take is truly eye opening.

I have heard of neither!
I will give the podcast a try - I looked at their list of podcasts and they have some really interesting discussion areas.
They really seem to dive deep into theology, epistemology, and touch a bit on eschatology.
The books by Brant Pitre seem also interesting but do you have any one of his that you'd recommend?

Pitre is a catholic scholar. His main area of expertise is on giving a historical/jewish interpretation of the Bible. "The Jewish Roots of the Eucharist" is one of his awesome books. It gives a wide range of interpretations on the symbolism in the Bible that people not acquainted with the jewish context wouldn't realize.

e.g. the four cups of the passover meal. Perhaps you already know this stuff... But it blew my mind when I first heard of it. The whole "pass this cup from me" started to make much more sense.
