As a product administrator, I want to assign a product to a sub-category so the product is properly categorized in my commerce experience.
Today on the Product Edit screen > Catalog tab, you can assign the product to a top-level category (select Catalog, then select category), but this experience does not offer any assignments to sub-categories within the top-level category. I would suggest it supporting up to 2 levels of su-categories.
