docs: confirm the Xilinx yocto-manifests branch for post-5.0 manual builds

1. Confirm whether rel-v2023.2 is still the correct Xilinx manifest branch
   for building PandABlocks 5.x.
2. If a newer branch is required for post-5.0, document it and the reason for
   the change.
3. If the branch varies by PandABlocks release, add a small table (PandABlocks
   version → manifest branch).

rel-v2023.2 is the right one until we update Vivado, once we update to Vivado 2025.2, we start using the branch rel-v2025.2.

So we still use main for meta-panda but point to rel-v2025.2 for upstream?

Yes, that's fine, the manifest branch used is just a field in the kas configuration, the reason why I was using the same branch in meta-panda initially was merely because of yocto convention.
