[feature:] Automatically render table on README #65

Describe the situation that led to the request and a solution

The table on the README should be generated automatically by looking at the files in the content directory. The table I am referring to starts here

An additional piece of metadata should probably be placed in each of the content/*.qmd files though that specifies the status of the case study. For example, the case study for Pacific Hake is still undergoing development.

Alternative solutions

Leave it as a manually created table and create some reminder system to make sure that the table is updated.
