Further refine stack install process

Currently the install process is a bit tedious, lengthy, and unintuitive. It should be further simplified for easier deployments in new regions. This was highlighted with the recent addition of Georgia State Mesh's deployment of Meshinfo.

Some specific highlights that need addressing:

1. optional config example for deployments that do not want to use the MQTT container, or already have their own
2. config example for using non-caddy edge proxies such as NPM or SWAG
3. simplifying the coverage feature option
4. possible walk-through install script during setup for config.toml options that could include addressing the above
