BGS has decided in their infinite wisdom and hatred for their user base to update skyrim again - presumably this will break SKSE and a ton of mods. I know how to stop Steam from auto-updating the game in Windows, but how would one go about doing that under amethyst? Is it the same as finding the manifest file and setting read-only flags, as in Windows?
Amethyst also allows the game. To run directly from Steam, would that force the update?
A full write-up or guide on how to not break your game by updating would be super helpful.

It should be in theory.
I'm adding a setting that basically does this. I'm not sure if it actually stops an update yet
This wouldn't help if someone has already updated/reinstalled the game. But someone will probably make a downgrader that we can implement but we'll cross that bridge when we get there
