Structural plates do not transfer ammo to weapons.

Describe the bug
When using structural plates to create ground targets the ammo doesn't transfer through the craft to the weapons.

To Reproduce
Please provide the steps to reproduce the behaviour:

1. Place a structural plate.
2. Place weapons and ammo.
3. Launch.

Expected behaviour
Ammo should transfer through the vessel to the weapons.

I saw an earlier bug report saying to enable crossfeed on the parts the weapons are connected to but that option is already enabled by default. This bug also doesn't affect fuselages and Girder segments.

Quick correction here, Disabling the respect crossfeed setting works for the ground targets but not for the aircrafts I built, which are a very niche use case where I have stages split into two vessels that split and which needs crossfeed disabled.

Ammo follows the standard fuel crossfeed rules by default and simply ignores crossfeed (pulling ammo from across the entire vessel) if the "Weapons Respect Crossfeed" option is disabled.
For most structural parts, crossfeed is disabled (though oddly, not for girders).
By the sounds of it, you want to enable crossfeed on structural panels (and potentially other parts), which is best accomplished with a MM patch, e.g., by placing a file StructuralCrossfeed.cfg somewhere in your GameData folder with the contents
