docs(readme): fix tour GIF and Monte Carlo crop

- Tour GIF: start with analytics (populated), skip overview (empty
  Mission Control). Frames: analytics → agents → brain → about.
- Monte Carlo: zoomed crop showing chart + P10/P50/P90 percentile
  boxes, no sidebar bleed, no Recall Quality panel.
